RECIPE: Tropical Chia Pudding

INGREDIENTS


Makes 2 servings


  • 1 cup unsweetened almond milk (or sub another milk)

  • 1/3 cup chia seeds

  • 1 tsp vanilla extract

  • 2 tsp maple syrup

  • 2 tsp unsweetened coconut flakes

  • 1/3 cup macadamia nuts, raw, chopped

  • 1 mango (or 1 cup frozen defrosted)


DIRECTIONS


Prep and Make

  1. Add milk, chia seeds, vanilla, and maple syrup to mason jar with lid.

  2. Shake vigorously and let stand for 10 minutes.

  3. Shake again and place in refrigerator overnight.

  4. Remove pudding from refrigerator and stir.

  5. Place in serving dish and garnish with mango, unsweetened coconut flakes, and macadamia nuts.

Note: Think of this recipe as a technique, and then vary with different fruit choices (fresh or frozen) and nut combinations. A quick puree of the fruit in the blender before adding to the pudding adds a desert-like touch.
