Blueberry Walnut Overnight Oats

Blueberry Walnut Overnight Oats

INGREDIENTS

  • 1/2 cup Greek yogurt, plain

  • 1 cup oats, rolled gluten free, if needed

  • 1 cup almond milk, unsweetened or milk of choice

  • 2 Tbs chia seeds

  • 1 Tbs maple syrup

  • 1/2 tsp vanilla extract

  • 1 lemon, zested (for 1 tablespoon lemon zest)

  • 1/2 tsp cinnamon

  • 1/4 tsp nutmeg

  • 2 Tbs walnuts, crushed for garnish

  • 1 cup blueberries



DIRECTIONS

Prep

  • Zest lemon for 1 tablespoon of zest.


Make
  1. In a glass jar, mix yogurt, oats, milk, chia seeds, maple syrup, vanilla, spices, and lemon zest. Add the top to the jar and shake.

  2. Leave in the refrigerator overnight.

  3. Top with walnuts


Notes: A delicious make ahead breakfast, use this recipe as a template, and vary the fruit and nuts for variety - for example - strawberry and sliced almonds; orange sections and pecans, kiwi and pumpkin seeds.
