Chicken and Avocado Wrap

Chicken and Avocado Wrap

INGREDIENTS

  • 1 Tortilla, whole wheat (or gluten-free wrap)

  • 3 oz chicken (use leftover from dinner)

  • 1/2 cup Lettuce, shredded

  • 1/4 Avocado, mashed (or sliced)

  • 1 Lime, juiced

  • Salt, to taste







DIRECTIONS

Prep

  1. Chop lettuce

  2. Mash or slice avocado


Make

  1. Warm tortilla for 2 minutes in microwave.

  2. About 3/4 of the way down the tortilla, add sliced chicken, shredded lettuce, avocado, and a squeeze of fresh lime. Season to taste.

  3. Roll to wrap the tortilla around the the filling by folding the bottom of the tortilla up and over the filling, fold the left and right side over the filling, then roll the entire package, up to towards the top.

  4. Wrap tightly and refrigerate if not eating right away.


Tips from Ellen: Have fun with this - add in any veggies that you would like - fresh, or jarred - sliced cabbage, fresh cucumber, jarred salsa or roasted red peppers would be delicious.
