Cold Cucumber Soup with Yogurt and Dill

INGREDIENTS


  • 2 seedless cucumbers, chopped

  • 3 Tbs lemon, juiced

  • 1 Small shallot

  • 1 clove garlic, chopped

  • 1/3 cup fresh dill

  • 1/4 cup fresh parsley

  • 2 Tbs olive oil

  • 1/4 cup radish, chopped finely

  • 1  1/2 cups plain Greek yogurt



DIRECTIONS


Make

  1. In a blender, combine the chopped cucumber with the yogurt, lemon juice, shallot, garlic, dill, parsley, and olive oil. Blend until smooth.

  2. Season with salt and pepper to taste.

  3. Refrigerate until cool.


Note: Season the soup again just before serving. Pour the soup into bowls. Garnish with the finely diced cucumber, red onion and a drizzle of olive oil and serve.
