Pumpkin Spice Blender Oats

INGREDIENTS


  • 1/2 cup oatmeal old fashioned

  • 1 Tbs flax meal

  • 1/2 tsp baking powder

  • 1 tsp pumpkin pie spice

  • 1/4 cup pumpkin

  • 1 egg

  • 1/4 cup almond milk unsweetened (or milk of choice)

  • 1 Tbs maple syrup







DIRECTIONS

Prep

  1. Preheat oven to 350°F.

  2. Grease 8-ounce ramekin (or oven proof dish)


Make

  1. Add all ingredients to a blender and blend until smooth.

  2. Pour into a greased ramekin.

  3. Place ramekin on a small baking sheet and bake for 12-15 minutes.

  4. Let cool for 5-10 minutes.

  5. Top with yogurt of choice, if desired [nutrition facts are without yogurt].
