Roasted Red Pepper Hummus

Makes: 6 servings


INGREDIENTS

  • 3/4 cup roasted red peppers, chopped, jarred

  • 1 (15 oz.) can chickpeas, drained and rinsed

  • 1 lemon, juiced (1/4 cup juice)

  • 1/4 cup tahini

  • 2 cloves garlic, chopped

  • 2 Tbs olive oil

  • 1/2 tsp cumin, ground

  • 1/8 tsp cayenne pepper (pinch)

  • 1/2 tsp salt


Directions


Prep

  1. Chop garlic.

  2. Drain and chop peppers.

  3. Juice lemons.

  4. Drain and rinse chickpeas.


Make

  1. Combine everything together in a food processor.

  2. Pulse to blend.
