INGREDIENTS
1/2 cup tahini
1 Clove garlic, peeled and pressed
2 lemon, juiced (1/4 cup lemon juice)
1/4 cup water
1 Tbs maple syrup
1/4 tsp Dijon mustard
1 head romaine lettuce, chopped
1 Tbs olive oil
salt and pepper, to taste
DIRECTIONS
Prep
Mince garlic.
Chop romaine.
Make
Whisk together the tahini, garlic, lemon juice, water, maple syrup and mustard, adding more water as needed to make dressing creamy.
Season with salt and pepper.
Dress the romaine lettuce with the dressing and serve.
Note: Use any type of leafy green like spinach, kale, arugula etc.
