Sheet Pan Chicken Vegetable Stir Fry

Total Time: 45 minutes


Makes: 4 serving


INGREDIENTS

  • 1 1/2 chicken breasts, boneless and skinless, cut into equal chunks

  • 1 head broccoli, chopped (about 2 cups)

  • 1 red pepper, sliced

  • 3 Tbs soy sauce gluten-free

  • 1 tsp corn starch

  • 1 Tbs rice wine vinegar

  • 1 Tbs maple syrup

  • 1 Tbs sesame oil

  • 1 tsp ground ginger

  • red pepper flakes, to taste


DIRECTIONS: Prep

  1. Preheat oven to 425°F.

  2. Line baking sheet with parchment paper.


Make

  1. Whisk together soy sauce, corn starch, garlic, vinegar, maple syrup, sesame oil, ginger and red pepper flake until well combined.

  2. Place chicken in the sauce and let it marinate for a few minutes while you chop the peppers and broccoli.

  3. Add vegetables, chicken and sauce to sheet pan and toss well so veggies are covered in sauce.

  4. Cook in preheated oven for about 16-20 minutes. Toss once halfway through.
