INGREDIENTS
2 cup peaches, chopped ( or fresh mango)
1/2 cup tomato, diced
1/2 tsp jalapeño, minced (optional)
1/2 bell pepper, chopped
1/4 cup scallions, chopped (other onion)
3 Tbs cilantro, chopped
1 lime, juiced
salt, to taste
Directions
Prep
Dice the peach, tomato, and bell pepper.
Mince scallions and jalapeño.
Juice lime.
Finely chop cilantro.
Make
Mix all ingredients in a bowl and enjoy!
Notes: Salsa is excellent with grilled or baked fish.
